Air-Fryer Crispy Boneless Pork Chops

Ingredients

2 Boneless Pork Chops (3/4 - 1" thickness)
3/4 cup(s) Seasoned Panko Bread Crumbs
2 tablespoon(s) Unsalted Butter (melted)
1 large Egg
2 tablespoon(s) Dijon Mustard
1 tablespoon(s) All-purpose Flour
1 1/2 teaspoon(s) Dry Mustard
1 teaspoon(s) Garlic Powder
1/4 teaspoon(s) Salt
1/2 teaspoon(s) Cayenne Pepper
1 Lemon - Cut into Wedges

Remove pork chops from fridge and allow to warm for approx. 30 minutes

Toss panko into pan with melted butter, stir to evenly coat, stirring frequently over medium-low heat until golden brown, and transfer to a plate.

Whisk egg, Dijon, floud, dry mustard, garlic powder, salt, & cayenne together in a shallow bowl.

Pat trimmed pork chops dry with a paper towel, cut a slit into the edge fat, then dredge in the egg mix, letting any excess drip off, then coat with panko mixture, pressing it gently to adhere.

Pre-heat air fryer to 400, place chops onto lightly sprayed air fryer basket or grill plate and cook until pork registers 140 degrees, 10-12 minutes, flipping chops halfway thru.

Let chops rest for 5-6 minutes, and serve with lemon wedges.
