Ingredients
14-16 ounce Polska Kielbasa - cut into 1/4" half-moons |
1 Green Bell Pepper - Diced |
1 Red, Yellow or Orange Pepper - Diced |
1 Sweet Onion - Diced |
2 clove(s) Garlic - Chopped |
2 medium Russett Potatoes - Peeled and diced into 1/2" cubes |
Olive Oil |
Salt & Pepper |
Instructions
In a large heavy bottom skillet (I like my Calphalon non-stick) heat 2-3 Tbl olive oil over medium-high heat. Add the cut potatoes to the pan and season with salt & pepper. Fry, stirring regularly, until golden brown and cooked through, approx. 8-10 minutes. In a separate pan, brown the kielbasa slices in 1 Tbl of olive oil over medium-high heat for approx. 4-6 minutes, until slightly browned. Remove the kielbasa from the pan and set aside. Add 1 Tbl of olive oil, the garlic, onions and peppers to the kielbasa pan, season with salt & pepper and cook, stirring occasionally until softened, approx. 5 minutes. Add the kielbasa and pepper/onion mix to the golden potatoes, mixing everything together and serve hot. NOTE: As an option, melt 2 Tbl of butter in the empty pan, loosely scramble 4 eggs seasoned with salt & pepper, and while still somewhat "wet", fold throughly into the completed kielbasa mix, and finish cooking.

Notes:If you like you foods to have a little spicy flair, add 2-3 jalapeno peppers to the onion & pepper mix. |
