2 tablespoon(s) Olive Oil |
2 cup(s) Seasoned Breadcrumbs |
3 cup(s) Grated Pecorino Romano Cheese or 4 Savory Italian Cheese Combo |
2 Eggs (Ex. Large or Jumbo) |
Instructions
Preheat oven to 425 Spread olive oil evenly over the surface of a large baking dish Combine breadcrumbs and grated cheese in a large bowl. NOTE: You may choose to add additional garlic powder and/or onion powder to this coating mix. I did and loved it! :o) Beat eggs in a separate bowl Rince chicken and pat dry. Dip in egg wash then breadcrumb/cheese mix to coat thoroughly on both sides, pressing crumbs into the surface. Salt and pepper to taste and place skin side up in prepared pan. Bake 40-50 minutes until nicely browned. NOTE: Some ovens bake hotter than others, so I checked for an internal temp of 165 to measure proper cooking time. Remove from oven and let stand a few minutes before serving. |
