Ginger Citrus Vinaigrette

Ingredients

1 inch piece fresh ginger, peeled
1/4 cup(s) red wine vinegar
2 tablespoon(s) chopped sweet onions
2 tablespoon(s) honey
2 teaspoon(s) orange zest
1/2 teaspoon(s) dry mustard
1/2 teaspoon(s) salt
1/2 cup(s) olive oil
1. Pulse first 7 ingredients in a blender or food processor until blended. With blender running, add olive oil in a slow, steady stream, processing until smooth. Pour through a fine wire-mesh strainer into a bowl; discard solids.
