Ingredients

2-1/2 cup(s) frozen tater tots or cubed hash brown potatoes
1 cup(s) fully cooked ham, chopped
1/4 cup(s) onions, chopped
1/4 cup(s) green peppers, chopped
2 tablespoon(s) vegetable oil
4 large eggs, beated
salt and pepper to taste
In a large skillet, cook potatoes, ham, onion and green pepper in oil over medium heat for 8 to 10 minutes. Stir constantly. If using Tater Tots use spatula to break apart and mix well. Add eggs; cook and stir until eggs are completely set. Season to taste with salt and pepper
