Ingredients
4 large baking potatoes |
1 tablespoon(s) vegetable oil |
4 strips bacon, cooked |
6 tablespoon(s) butter |
1/2 cup(s) milk |
2 tablespoon(s) fresh chopped chives |
2 tablespoon(s) freshly grated parmesan cheese |
2 tablespoon(s) grated sharp cheddar |
1 tablespoon(s) chopped onion |
1 teaspoon(s) salt |
1 teaspoon(s) pepper |
Instructions
Wash and dry potatoes. Rub oil into skin and bake in 350 oven for one hour. Let cool 5 minutes or until easy to handle.
Crumble bacon into bits and mix with all other ingredients except cheddar.
With a knife, cut off the very top of the potatoes. Hollow out with a spoon,leaving a little potato against the skins so they wont fall apart. Add potato meat to the bacon mixture.
Restuff potato skins and top with cheddar. Bake in a 300 degree oven for 1/2 hour. |
