Irish Soda Bread

Ingredients

3 cup(s) flour
2 tablespoon(s) sugar
1 teaspoon(s) salt
2 teaspoon(s) baking powder
1 teaspoon(s) baking soda
1 - 1-1/2 cup(s) seedless raisins
1/2 cup(s) butter, softened
1 1/2 cup(s) buttermilk

Preheat oven to 350

Mix flour, sugar, salt, baking powder & baking soda in a bowl.  Add raisins & softened butter.  Mix in buttermilk.  Mix until well blended. Dough will be stiff.

Place on hard surface that has been dusted with flour.  Knead for five minutes.  OR, mix in Kitchaid using dough hooks to mix and knead.  Shape dough into an oval loaf about 7" long.  Using a serrated knife score a cross onto the top.  Place on parchment lined cookie sheet.  Bake for about an hour, more or less. Edges and top should be golden.
