German Chocolate Brownies

Ingredients

For the Chocolate Brownies
1/3 cup(s) unsweetened cocoa powder (dark chocolate preferred)
1/2 cup(s) oil (vegetable or canola)
1/2 cup(s) butter, softened
2 cup(s) granulated sugar
4 large eggs
2 teaspoon(s) vanilla extract
1 1/2 cup(s) all purpose flour
1 teaspoon(s) salt
For the German Chocolate Frosting
1/4 cup(s) light brown sugar
1/4 cup(s) granulated sugar
1/4 cup(s) butter
2 egg yolks
1/3 cup(s) evaporated milk
2 teaspoon(s) vanilla extract
1/2 cup(s) chopped pecans
1/2 cup(s) shredded sweetened coconut

For the Brownies:

1.  Preheat oven to 350 degrees.  Grease a 9x13" pan with non stick cooking spray

2.  In a large mixing bowl, pour oil over cocoa powder and mix.  Add softened butter and mix until smooth.  Add sugar and mix for 1 minute.

3.  Add eggs, one at a time, mixing after each addition.  Add vanile and mix.  Add flour and salt and stir to combine.

4.  Pour batter into prepared pan.  Bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.

For the German Chocolate Frosting

1.  In a medium saucepan add brown sugar, granulated sugar, butter, egg yolks, and evaporated milk.  Stir to combine and bring the mixture to a low boil over medium heat. Stir constantly for several minutes until the mixture begins to thicken.

2.  Remove from heat and stir in vanilla, nuts and coconut.  All to cool completely. 

3.  Once the brownies have cooled, cover the brownies with a layer of German chocolate frosting.
