Garlic Zoodles

Ingredients

1/2 cup(s) Pine Nuts (or slivered almonds)
1/4 cup(s) Italian parsley, finely chopped
1/4 cup(s) Shallot (or sweet onion) finely chopped
3 tablespoon(s) Olive Oil
1 tablespoon(s) Garlic, minced
1 pound(s) Fresh zucchini spirals (approx. 6 cups)
1/2 cup(s) Grated Parmesan (or romano) cheese
Salt to tatse

Preheat small saute pan on medium heat.  Place pine nuts in pan and cook 2-3 minutes, stirring often, until toasted to your liking.  Remove pan from heat and set pine nuts aside to cool.

Return same saute pan to medium heat.  Place olive oil and garlic in pan and cook 2 minutes or so, until garlic is golden in color.  Remove from heat and let stand to cool.

Chop parsley and shallot (onion)

Combine cooled nuts and garlic with parsley and shallots, then add to zucchini spirals, gently tossing to evenly coat.

Serve and enjoy
