Ingredients

1 pound(s) brussels sprouts, ends cut and old leaves taken off
4 large garlic cloves, cut into large pieces of 3 or 4
2 slices of bacon, cut into small pieces

  1. Preheat an oven to 375°F.
  2. Peel garlic cloves and cut them into two to four pieces each. Scatter the garlic over the brussels sprouts.
  3. Cut the bacon into small pieces; scatter over the brussels sprouts.
  4. Cover the roasting pan with foil and cook until bacon just starts to render its fat and brussels are a bit tender, about 20 minutes. Remove foil, toss everything around a bit, increase the heat to 400 degrees and continue roasting until brussels sprouts are tender, bacon is browned, and garlic is tender and browned, 30 to 40 minutes.
  5. Taste and sprinkle with salt if needed (some bacon is saltier than other bacon). Serve brussels sprouts hot.
