Barney's Banana Cream Pie

Ingredients

1 quart Heavy Whipping Cream
1 pint Half-n-half
14 ounce Instant Vanilla Pudding Mix (See NOTES)
1 cup(s) Crushed Ice
3 Bananas
2 9" Pie Shells (See NOTES)
Whipped Cream or Cool Whip

Put whipping cream and half-n-half in a mixing bowl; blend in pudding mix and blend at lowest mixer speed.  Add crushed ice and continue mixing for approx 5 minutes.  Increase to medium speed and mix for another 5 minutes, then increase to high speed and mix until stiff.

While pudding is being mixed, line the bottom of pie shell(s) with banana slices.

Fill shell with prepared filling to just under rim height and add banana slices.  Top with additional filling to desired height (See NOTES) and refrigerate for at least one hour, until properly chilled.

Top with whipped cream (or Cool Whip) and a few slices of bananas for garnish.

Notes:NOTE: This recipe was created using a Restaurant size pudding mix. I used 2 large (5+ oz.) packages and 1 small (3+ oz.) to meet total and it worked fine. It should also be noted that this quantity will allow for one "Super Stacked" restaurant style pie, or one "Quite Full" pie and enough leftover mix for 3-4 small pudding servings, or two "Rim Height" pies. Regarding the "Pie Shells", you can elect either a baked crust or a graham cracker crust depending on personal preference. The quantity of pie shells would be dictated by preference selection of above note. Personal Note: I added finely crushed peanuts on top of the whipped cream garnish and found it to be a tasty addition! :o)
