Tuscan Style Roasted Asparagus

Ingredients

1-1/2 pound(s) fresh asparagus, trimmed
1-1/2 cup(s) grape tomatoes, halved
3 tablespoon(s) pine nuts
3 tablespoon(s) olive oil, divided
2 clove(s) garlic, minced
1 teaspoon(s) kosher salt
1/2 teaspoon(s) pepper
1 tablespoon(s) lemon juice
1/3 cup(s) grated Parmesan cheese
1 teaspoon(s) lemon peel

Place the asparagus, tomatoes and pine nuts on a foil-lined 15-in. x 10-in. x 1-in. baking pan. Mix 2 tablespoons oil, garlic, salt and pepper; add to asparagus and toss to coat.
Bake at 400° for 15-20 minutes or just until asparagus is tender. Drizzle with remaining oil and lemon juice; sprinkle with cheese and lemon peel. Toss to combine. Yield: 8 servings.
