Simple Sausage & Peppers

|4-5 clove(s) Garlic - Finely chopped|
|4-5 Bell Peppers - cored and sliced to 1/2|
|3 large Sweet Onions - slivered|
|3/4 cup(s) Dry Italian Red Wine|

Pre-heat oven to 350.
Slice sausage into approx. 4" links and brown to desired coloring in heavy pan over medium high heat.
(NOTE: If sausage is very lean, olive oil may be added to drippings)
Reduce heat to medium and add diced garlic to drippings. Saute until garlic starts to turn tan in color and add 1/4 cup of wine. Raise heat and allow wine to render down and thicken.
Dump the sausage/garlic mix into a roasting pan or Dutch Oven, spread peppers and onions around the roasting pan and lightly toss. Drizzle some olive oil over contents and place in pre-heated oven for approx. 30-40 minutes.
After approx. 15 minutes add remaining wine and salt and pepper to taste.
