Maui Onion Straws

Ingredients

1 whole Large Sweet Onion
2 whole Eggs
1/3 cup(s) Milk
1 1/2 cup(s) All purpose flour
1 tablespoon(s) Garlic Powder (NOT garlic salt)
1 tablespoon(s) Cayenne Pepper
1 tablespoon(s) Paprika
1 tablespoon(s) Salt
1 teaspoon(s) Black Pepper
2 cup(s) Canola Oil for frying
Whisk the eggs and milk in a medium bowl. Prepare onion and slice in half thru the poles. Turn each half onto it's side and slice to desired thickness, approx 1/8". Separate slices into individual pieces and drop into the milk mixture. Stir occasionally to ensure all straws are coated and allow to soak. Mix all dry ingredients in a second bowl, ensuring all the mix is well blended. Heat approx. 2 cups of canola oil over med-high heat in a large, heavy duty frying pan. Remove onion straws (enough to evenly distribute in the frying pan) from the milk mixture, shake off excess and dredge in the flour mixture. Add to oil and fry until golden brown, remove and allow to drain on paper towels. Repeat until complete.
Notes:May be used as a sandwich/burger topping or as a side dish.
