Apple-Pear Salad With Lemon-Poppy Seed Dressing

16 ounce package romaine lettuce, thoroughly washed
6 ounce shredded Swiss cheese
1 cup(s) salted cashews
1/2 cup(s) sweetened dried cranberries
1 large apple, diced
1 large pear, diced
Lemon-Poppy Seed Dressing
2/3 cup(s) light olive oil
1/2 cup(s) sugar
1/3 cup(s) fresh lemon juice
1-1/2 tablespoon(s) poppy seeds
1 teaspoon(s) Dijon mustard
Toss together first 6 ingredients in a large bowl; serve with Lemon-Poppy Seed Dressing. Process 2/3 cup light olive oil and remaining ingredients in a blender until smooth. Store in an airtight container in the refrigerator up to 1 week; serve at room temperature
